Description

This is a tradition in our household that we have on holiday mornings (because it can be put together ahead of time), and it is perfect for brunches. My sister Laura does a million variations on Margie’s Eggs so there’s no way to make it wrong. Go ahead and change the cheese, put frozen hash browns on the bottom, toss in real bacon bits, etc. Another plus is that this tastes great reheated, too!

Ingredients

  • 10  Eggs
  • 1 pound Cheddar Cheese, Shredded
  • 1 pint Cottage Cheese
  • ½ cups Melted Butter (we've Skipped This Before)
  • ½ cups Flour
  • 4 ounces, weight Chopped Green Chilies, Undrained, Or Less To Taste
  • 1 teaspoon Baking Powder
  • Salt And Pepper, to taste
  • Your Desired Toppings, Such As Salsa, Sour Cream, Etc., To Serve

Preparation

Mix everything together and put into a 10×13 greased pan (at this time, you can put it in the fridge overnight).

Bake in a preheated oven at 400ºF for 10 minutes, and then reduce temperature to 350ºF and continue baking for 35 minutes or until an inserted toothpick comes out kinda clean (don’t overcook).

Cut into squares and serve with topping options like salsa, etc.

I made this one night when I didn’t have any “protein” ready for dinner. I substituted Rotel for the green chiles and added chopped ham and garlic. Yum!
