Description

This icebox fruit cake has been a family favorite since before I was born. It tastes like candy and is not your typical fruit cake.

Ingredients

  • 1 stick Butter
  • 16 ounces, weight Marshmallows
  • 1 jar (6 Oz. Jar) Cherries
  • 16 ounces, weight Graham Crackers (crushed)
  • 1 Tablespoon Sugar
  • 2 cups Raisins
  • 1 cup Pecans
  • 1 Tablespoon Vanilla

Preparation

Melt butter in a saucepan. Add the marshmallows and melt. Add cherries and juice to the melted mixture. Add the crushed graham cracker crumbs to the mixture and combine. Add the sugar; mix. Add raisins. Add pecans and mix. Add vanilla and mix. Use hands to mix well. Rubber gloves should be used as this mixture is warm and sticky. When properly mixed, take handfuls of mixture and place in a ziplock bag. Pack it down and place in the fridge. When chilled, pull back the bag, slice and serve.
