Description

The best Christmas cookies you will ever have! They literally melt in your mouth as soon as you start eating them. Simply a flavor sensation!

Ingredients

  • 1-½ cup Powdered Sugar
  • 2 whole Egg Whites
  • 7 ounces, weight Walnuts, Chopped
  • 1 teaspoon Cinnamon
  • ¼ teaspoons Lemon Juice
  • 1 cup Powdered Sugar

Preparation

In a medium bowl combine the powdered sugar and egg whites with an electric mixer until fluffy.

In a large bowl combine nuts, cinnamon, lemon juice and 2/3 of the sugar/egg white mixture. Mix until well combined. Cover the dough with a sheet of plastic wrap and refrigerate for at least one hour. Refrigerate the remaining egg white mixture as well.

Preheat you oven to 305°F. Line a cookie sheet with parchment paper.

Put your dough onto a work surface. Use your hands and press the dough out until it’s about 1/2 inch thin (you can’t roll the dough, so you have to work with your hands).

Put your powdered sugar into a shallow bowl. Now dip your star shaped cookie cutter in powdered sugar and cut out one cookie at a time (always dipping in powdered sugar between each cookie). Gently place the cookies on the baking sheet.

Brush all cookies with the remaining sugar/egg white mixture. Bake for 12 minutes, but crack open the oven with a wooden spoon after 8 minutes (stick wooden spoon in the oven door so it’s just barely open). Then remove the cookies from the oven. Let them cool completely before transferring into a container.

Hi – Just read this recipe and wanted to double check on the oven temp. It’s 305 NOT 350. I’ve never seen 305 degrees before in any recipe, so I thought I’d better check. Also, if you’re reading this, would you please answer the questions that Cheri submitted. Thank you!

I made this exact recipe last week and have some questions….

1. Seven ounces of ground walnuts. Before grinding, or after
2. Egg whites and powdered sugar all at once? Or beat egg whites first? Mine never really got fluffy.
3. My mixture was WAAAY too sticky and wet to knead.
4. I had to use a LOT of powdered sugar to keep the dough from sticking to me and the counter when I patted it down to cut shapes.
My result was a dense nutty cookie, which is yummy, but I don’t think it turned out like it should have. I’m not a novice in the baking department, and want to try these again, so would love to have these questions answered!
