Description

This flavorful sandwich is a wonderful way to eat leftover Easter eggs.

Ingredients

  • 1 whole Hard Boiled Egg
  • 2 Tablespoons Light Mayonnaise
  • 1 stalk Green Onion
  • ¼ teaspoons Dry Mustard
  • ⅛ teaspoons Paprika
  • 1 dash Salt
  • 1 dash Black Pepper
  • 2 slices Wheat Bread, Toasted
  • 2 leaves Green Leaf Lettuce, Rinsed

Preparation

Peel your hard-boiled egg and discard the shell. Place the egg in a small bowl and use a fork to break it into small pieces, or use an egg slicer to accomplish the same task. Add the mayonnaise and stir until incorporated. Mince the green onion and add it to the egg mixture along with the mustard and paprika. Add salt and pepper to taste. I generally use a generous amount of pepper and very little salt.

Serve on toasted wheat bread with a generous amount of lettuce.

Delicious and so easy, plus I really appreciate that all of the ingredients were things I had on hand. I didn’t have any lettuce, but added tomatoes and it was perfect. Thanks for the great recipe!

I was in the mood for some egg salad but didn’t want to make a trip to the store. This recipe was perfect, and I already had all the ingredients at home. It was yummy and almost tasted like my grandma’s deviled eggs. Almost.
