Description

Healthy and delicious!

Ingredients

  • 2 whole Boneless, Skinless Chicken Breasts
  • 1 whole Onion, Diced
  • 3 cloves Garlic, Minced
  • 1 whole Green Bell Pepper, Diced
  • 14 ounces, fluid Canned Fire-roasted Tomatoes
  • 14 ounces, fluid Canned Black Beans
  • 12 ounces, fluid Canned Rotel Or Other Tomatoes With Chiles
  • 1 cup Fresh Or Frozen Corn Kernels
  • 1 teaspoon Seasoned Salt
  • 1 teaspoon Ground Cumin
  • 1 Tablespoon Chili Powder
  • Lime Wedges And Cilantro For Serving

Preparation

Add all ingredients to a crockpot. Cook on high for 4 hours or low for 8 hours. Use a fork to shred the chicken into the chili. Taste, and add more salt if you’d like.

Serve with lime wedges, fresh cilantro, and any other toppings you’d like!
