Description

Almost a dessert, these autumn fruits and sweet spices combine to make a new must-have accompaniment for turkey or chicken.

Ingredients

  • 1 whole Large Orange, Zested Then Sectioned And Diced
  • 1 package (12 Oz. Size) Fresh Cranberries, Rinsed And Picked Over
  • 1 whole Large Granny Smith Apple
  • 1 whole Large Pear (I Used Bosc)
  • 1 cup White Granulated Sugar
  • 2 Tablespoons Brown Sugar
  • ½ cups Apple Juice Or Apple Cider
  • ¼ cups Orange Juice
  • 1-¼ cup Water
  • 1 teaspoon Grated Fresh Ginger
  • 2 whole Cinnamon Sticks
  • ½ teaspoons Salt
  • ¼ teaspoons Ground Nutmeg
  • ⅛ teaspoons Ground Allspice

Preparation

For the orange: After removing the zest from the orange, remove the remaining pith from the orange, cut out each section, then dice the sections.

Combine all ingredients in a medium sauce pot. Cook over medium heat, stirring as needed, until cranberries have burst and mixture has reduced and thickened. It may be necessary to lower heat as the compote starts to thicken so that it will not burn.

May be served warm or at room temperature.

Note: May be made a few days ahead. Store covered in the refrigerator.
