1. Line a baking sheet with parchment paper.
2. Slowly melt the chocolate in a heatproof bowl set over a pot of simmering water. When all the chocolate has melted, add the clementine zest.
3. Remove from the heat and rapidly add the nuts, cranberries, and cookies. Mix well.
4. Spread the chocolate mixture on the baking sheet. Sprinkle a few extra nuts and cranberries on top. Let set for at least two hours.
5. Break into pieces and enjoy.
