Description

Delicious Santa-approved eggnog muffins!

Ingredients

  • FOR THE MUFFINS:
  • 3 cups All-purpose Flour
  • 1 Tablespoon Baking Powder
  • 1 teaspoon Kosher Salt
  • ¾ teaspoons Ground Nutmeg
  • ½ teaspoons Ground Cinnamon
  • ⅔ cups Butter Flavored Crisco
  • 1 cup Granulated Sugar
  • 2 whole Eggs
  • 1 cup Eggnog
  • FOR THE GLAZE:
  • ½ cups Eggnog
  • ¼ teaspoons Ground Nutmeg
  • 3 cups Powdered Sugar

Preparation

Preheat oven to 350 F. In a small bowl, mix flour, baking powder, salt, nutmeg and cinnamon together. Set aside.

In a mixing bowl, mix Crisco with granulated sugar until blended. Add eggs and mix to combine. Slowly add in flour mixture and eggnog until combined.

Lightly spray two 36-count mini muffin pans with baking spray. Fill muffin cups 1/2 full and bake in a 350 F oven for 13-15 minutes. Remove from oven and allow muffins to cool completely before glazing.

In a medium-sized bowl whisk together eggnog, nutmeg and powdered sugar. Dip tops of muffins into glaze and allow to set (about 15 minutes). Enjoy!

Makes 72 mini muffins.
