Description

Marinated skirt steak on wooden skewers, grilled for this holiday!

Ingredients

  • 1 package 16 Ounce Package, Skirt Steak (about 2" Thickness)
  • 3 Tablespoons Olive Oil
  • ¼ teaspoons Black Pepper
  • ¼ teaspoons Rosemary
  • ¼ teaspoons Thyme
  • ¼ teaspoons Cumin
  • 8 whole 8" Wooden (or Metal) Skewers, If Using Wooden Soak In Water For 15 Minutes First

Preparation

Marinate the skirt steak for 24 hours prior to preparing.

To marinate: In a small bowl add olive oil, pepper, rosemary, thyme and cumin and stir together. Add skirt steak into a gallon size zip-lock bag and pour the seasonings into the bag. Massage the meat with the marinating mixture. Seal bag and place on a plate and put into the refrigerator for 24 hours.

Prepare a grill or griddle pan or if using an outdoor grill medium heat is best. Place wooden skewers in water for 15 minutes to soak before grilling. (You can use metal skewers if available to you).

Remove skirt steak from zip-lock bag and place on a clean work surface. Cut on the bias (against grain) into strips 3″ wide and the full length of steak. Stick the wooden skewer into the end of the steak strip and using a ripple effect, stick skewer into meat strip then out and back into meat, etc. Repeat with the rest of the skewers. Place skewers on the grill or griddle pan or outside grill and cook for 3-4 minutes each side.

Serve with all the picnic favorites, baked beans, corn on the cob, coleslaw, potato salad the list is endless. Enjoy!
