To make the watermelon puree, simple remove the rind and place chunks of seedless watermelon into a food processor or blender. There is enough water in the melon that no additional liquid will be needed. Pulse until completely liquid.
Combine all the ingredients in a cocktail shaker and muddle the mint with a muddler or the back of wooden spoon. Fill with ice and shake well. Pour into a chilled martini glass and garnish with a sprig of mint.
