Description

The perfect drink to cool down with during a summer heatwave! Delicious and full of fresh fruit!

Ingredients

  • 2 cups Watermelon Cubes, Plus Extra Slices For Garnish
  • 1 cup Strawberries Plus Extra For Garnish
  • 1  Lime, Divided
  • 8 cans (150ml Size) Schweppes Slimline Tonic Water

Preparation

Peel and roughly chop the watermelon into cubes. Set aside a couple of thin slices of the watermelon for garnish. Slightly smash watermelon cubes with a fork.

Wash and hull strawberries. Cut strawberries into quarters. Mix with the watermelon cubes.

Squeeze the juice of 1/2 lime into the mix (reserve remaining half for garnish). Transfer the mixture into a blender and blend until smooth.

Pour the liquified watermelon and strawberry mix through a sieve. With a spoon, press as much of the mixture as possible through the sieve. Discard pulp left on the sieve.

Transfer watermelon and strawberry juice into a container and keep in the refrigerator. You will have approximately 2 cups of ready juice.

To make an individual drink, add strawberry, watermelon and lime slices—roughly 3 slices of each—into a tall glass. Add 1/4 cup watermelon and strawberry juice. Add ice. Pour 150 ml tonic water on top of the juice. Mix. Serve immediately.
