A twist on the classic gin and tonic.
Cut up the strawberries into quarters, place into a bowl with the sugar and stir. Let them sit for about 10-15 minutes until the sugar granules are dissolved.
In a serving glass, add the strawberries and squeeze in one of the lime wedges, and drop the juiced lime wedge into the glass as well. With a wooden spoon (or you might have one of those fancy muddler things), squash the strawberries and the lime together for a few minutes, until the strawberry is in small pieces. Add the ice, gin and then tonic water and give the whole thing a good stir.
Garnish with the remaining lime wedge.
