A healthy, all-real-food version of the Shamrock Shake.
In a small saucepan over medium heat combine water, honey, 1/4 teaspoon vanilla and 4-5 mint leaves. Bring to a boil, stirring until honey dissolves and let simmer for 3-5 minutes. Remove from heat, set aside.
In a blender, combine the remaining ingredients. Add mint syrup once cooled. Puree in blender until smooth. Garnish with mint leaves and cacao nibs if desired.
Note: If you want it more of a “shake” consistency, once blended freeze for 30-45 minutes before enjoying.
A sweet and tangy mint syrup served with shredded Persian cucumber over ice is just the refreshing drink you need to beat the heat!
This recipe makes about 1 gallon of syrup. You’ll have plenty left over to give away as a great homemade gift.
1 tablespoon is enough for an 8oz glass of the julep.
