Description

This raspberry mojito is sweet and refreshing, ready in under 5 minutes. The perfect drink to serve at a party or just enjoy by yourself.

Makes 1 3/4 cups simple syrup.

Ingredients

  • FOR THE SIMPLE SYRUP:
  • 1 cup Granulated Sugar
  • 1 cup Water
  • FOR THE RASPBERRY MOJITO:
  • 8  Fresh Mint Leaves
  • 6  Fresh Raspberries
  • 1  Lime, Juiced
  • 2 ounces, fluid White Rum
  • 2 ounces, fluid Simple Syrup
  • 1 cup Ice
  • ½ cups Soda Water
  • Additional Raspberries, Mint Leaves And Lime Slices, For Garnish

Preparation

Prepare simple syrup by combining sugar and water and bringing it to a boil. Stir to let sugar dissolve and remove from heat. Let syrup cool.

In a sturdy glass, add mint leaves, raspberries, lime juice, rum and simple syrup. With a muddler or a wooden spoon, muddle to extract juices from mint leaves and raspberries.

Add ice to the glass and top with soda water. Garnish with more fresh raspberries, mint leaves or lime slices.

I tried it with my friend. We loved the concept, we are fond of mojito’s.
This was refreashing, adding raspberries is a good variation.
But there were too much alcohol in it. We couldn’t drink it because each time we swallowed, we were surprised by the taste of the alcohol. This taste anihiled all of other tastes, such as raspberries, or mint. We had to add Soda water several times because of this strong alcohol taste.
