Peppermint Mocha, refined-sugar-free and vegan!
For the coffee:
Using a regular drip coffee maker, make the strong brewed coffee using the indicated amounts of water and dark roast coffee.
For the mocha:
Heat milk in the microwave for 2–3 minutes. Stir in the the hot cocoa mix until dissolved.
Add the coffee and peppermint extract, stir until combined. Froth using a milk frother, if desired. Pour into cups and serve.
