Description

This sweet watermelon kefir slushie has a refreshing taste with a hint of tangy lime flavor. Unlike most of the fruit slushies, this watermelon kefir slushie contains only approximately 120 calories per single serving. It is a perfectly healthy summer treat.

Ingredients

  • FOR THE WATERMELON KEFIR JUICE:
  • 16 ounces, weight Diced Watermelon Cubes
  • 10 leaves Mint
  • ¼ cups Water Kefir
  • FOR THE WATERMELON SLUSHIE:
  • 24 ounces, weight Frozen Diced Watermelon Cubes
  • ¾ cups Watermelon Kefir Juice
  • 1  Lime, Juiced
  • ⅛ teaspoons Sea Salt
  • 2 sprigs Mint, For Garnish

Preparation

For the watermelon kefir juice:
Blend watermelon cubes with mint leaves until smooth. Pour through a fine-mesh strainer over a large bowl to collect the juice. Discard pulp.

Pour watermelon juice into a glass jar and add water kefir. Cover with lid and let it stand at room temperature for at least 18 hours.

For the watermelon slushie:
Line baking dish with parchment paper and then place diced watermelon cubes into baking dish. Freeze 4 hours until firm.

Add all watermelon slushie ingredients into a blender. Blend until smooth. Garnish with mint sprigs and serve immediately. If desired, add natural sweetener, such as pure stevia extract powder, for extra sweetness.
