In the bottom of a cocktail shaker, muddle* 5-6 mint leaves and 2-3 lime wedges. Really, really muddle it until you release the oils and the juice. It will smell minty/limey and there will be little bits of mint leaves in the bottom of the shaker.
Add a few drops of bitters, then fill the shaker halfway with crushed ice. Add both rums, the simple syrup, and the nectar. Make sure the lid is on, then shake 10-15 seconds to chill. Pour into a tall glass, top with club soda. Garnish with a sprig of mint and another lime wedge.
*Muddling refers to the technique that smooshes the ingredients. I have a Muddler – yes, that is it’s proper name – that I ordered online. You can also use a pestle if you have one or the back of a wooden spoon.
**Simple Syrup is equal parts white sugar and water that is brought to a boil, then allowed to cool. I put it in a jar and keep it in the fridge and it will keep for a long time.
