The peaches are delicious right now and so is this Bellini. It’s the perfect summer cocktail. Salute!
Pit and peel the 6 peaches and puree them in a small food processor on high until they’re smooth and a little frothy.
Pour peach nectar into a large pitcher and add 1/2 cup peach Schnapps. Stir. You can make this part up to an hour in advance. Just cover and chill until you’re ready to serve.
Add 1-2 bottles of chilled Prosecco into the pitcher and stir.
Pour into champagne glasses and garnish with a peach slice.
Hand one to your guests and let the party begin.
