* Note: Simple syrup is a basic bar mixture made out of equal parts water and equal parts sugar. You can purchase it or make your own. If you make it, bring one part water to a boil (in a pot on the stovetop or in the microwave) and then stir in the one part sugar until it’s completely dissolved. Allow to cool before using.
For the blueberry thyme puree:
Place all of the puree ingredients (everything except the thyme) in a saucepan and bring to a simmer over medium-high heat until sugar is dissolved and berries start to burst (5-10 minutes). Remove from heat and add 2-3 sprigs of thyme. Steep the thyme in the mixture for 3 minutes and then remove the sprigs. Blend the mixture in a blender or food processor until smooth. Strain the mixture into a pitcher through a fine mesh strainer to remove any remaining berry skins. Refrigerate until ready to use.
For the blueberry thyme margarita:
Add the margarita ingredients into a cocktail shaker with some ice and shake vigorously until chilled. Serve over ice with a sprig of thyme for garnish.
