Description

Even people who hate zucchini love this dish. The oatmeal topping and cinnamon-y goodness makes you think you’re having a dish of apple crisp.

Ingredients

  • FOR THE BASE:
  • 8 cups Peeled, Seeded And Sliced Zucchini
  • ½ cups Lemon Juice
  • ½ cups Granulated Sugar
  • 2 teaspoons Ground Cinnamon
  • 1 teaspoon Freshly-ground Nutmeg
  • 1 teaspoon Pure Vanilla Extract
  • FOR THE TOPPING:
  • 1-⅓ cup Packed Light Brown Sugar
  • 1 cup Old Fashioned Oats
  • 1 cup All-purpose Flour
  • 1 teaspoon Ground Cinnamon
  • ⅔ cups Cold Butter Cubed

Preparation

Preheat the oven to 375 F. Grease a 13x9x2-inch baking dish.

Combine the zucchini, lemon juice, sugar, cinnamon, nutmeg and vanilla in a large bowl, stirring until well mixed. Spread the zucchini mixture evenly in the prepared baking dish.

For the topping, combine the brown sugar, oats, flour and cinnamon in a bowl. Cut in the butter until the mixture is crumbly. Sprinkle the topping evenly over the zucchini mixture.

Bake at 375 F for 45-50 minutes or until golden brown, bubbly and the zucchini is tender. Makes 12-15 servings.
