A take on the traditional Oatmeal Raisin Cookie, using whole wheat flour and sucanat. You won’t miss the white flour at all!
In a large mixing bowl, combine butter and sucanat. Mix until creamy. Add eggs and vanilla. Stir well. Add flour, baking soda, cinnamon, and salt. Stir only until combined. Stir in rolled oats and raisins until mixture is completely combined.
Drop by tablespoons onto ungreased cookie sheets. Bake at 350 degrees F for 10-12 minutes. Let cool for 1-2 minutes on cookie sheet. Remove to wire racks to cool completely.
