Description

Warning: These cookies are extremely addictive! They have a wonderful flavor due to the creaminess of the white chocolate, crunch of the almond, and chewiness of the oatmeal. You will make many friends with these babies!

Ingredients

  • 1-½ cup Unsalted Butter, Softened
  • ½ cups Dark Brown Sugar
  • ½ cups White Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • 1-½ cup All-purpose Flour
  • ½ teaspoons Baking Powder
  • ½ teaspoons Baking Soda
  • ½ teaspoons Salt
  • ¾ cups Rolled Oats
  • 1 cup White Chocolate Chips
  • ½ cups Almonds, Chopped

Preparation

1. Preheat oven to 350°F and lightly grease 2 baking sheets.
2. In a medium bowl cream butter, dark brown sugar, and white sugar. Then, stir in the egg and vanilla. Set aside.
3. In a separate bowl, sift (or whisk together) the flour, baking powder, baking soda, and salt.
4. Gently incorporate dry ingredients into wet ingredients.
5. Add oats, white chocolate, and chopped almonds to the dough and mix until just incorporated.
6. Use a cookie scoop (approximately 1 Tablespoon sized) to scoop the batter onto the prepared tray. Using a scoop will help to ensure even sized cookies. Leave about 2 inches between each cookie on the sheet.
7. Bake or 10-12 minutes. Allow to rest 1-2 minutes on cookie sheet and then remove them from the pan and allow them to finish cooling on wire rack.

The cookies look so yummy, but I just tried to make this recipe and the cookies came out of the oven as a big blob. They didn’t look like the picture at all. I followed the recipe exactly. :(
