In a medium saucepan, bring water to boil and add sugar and stir until sugar is dissolved. Remove from heat and set aside to cool.
In a blender, process watermelon chunks, sugar syrup, mint leaves and lime juice and zest. Pour into a shallow pan and freeze for 3 hours, uncovered. Every 30 minutes, rake a fork across the frozen mixture to break it up. Serve in a pretty glass dish and garnish with a mint leaf.
