Description

It’s a cake and a science project! This fun cake can be made with very few ingredients and is easy enough to do with your kids.

The fact that it only takes 1 pan for the cake and 1 bowl for the frosting is just, well, the icing on the Wacky Cake!

Ingredients

  • FOR THE CAKE:
  • 1-½ cup All-purpose Flour
  • 1 cup Sugar
  • 1 teaspoon Salt
  • 1 teaspoon Baking Soda
  • ¼ cups Unsweetened Baking Cocoa Powder
  • 1 Tablespoon White Vinegar
  • 1 teaspoon Vanilla Extract
  • ⅓ cups Oil
  • 1 cup Cold Water
  • FOR THE FROSTING:
  • 2 cups Confectioners Sugar
  • 2-½ Tablespoons Softened Salted Butter
  • 2 Tablespoons Half-and-half
  • ½ teaspoons Vanilla Extract

Preparation

For the cake:
Preheat the oven to 350ºF. Mix dry ingredients in a 9×9 ungreased baking pan. Make 3 indentations in the dry ingredients. In one hole, put vinegar. In the second hole, put vanilla. In the third hole, put oil. Pour water over the top of all ingredients. Blend thoroughly. Bake until middle is no longer jiggly and toothpick pulls out clean, about 25 to 30 minutes.

For the frosting:
Combine ingredients and beat on medium speed until smooth and fluffy. Frost the cake.

Cake serves 9.
