Description

This was a popular dessert at the elementary school I attended back in the 60’s and 70’s. Everyone bought hot lunch on Wacky Cake day! It was so popular, the school printed the recipe on the monthly lunch calendar for the parents and kids to make at home.

Ingredients

  • 1-½ cup Flour
  • 1 cup Sugar
  • 3 Tablespoons Cocoa
  • 1 teaspoon Baking Soda
  • ½ teaspoons Salt
  • 1 Tablespoon White Vinegar
  • ½ cups Vegetable Oil
  • 1 cup Water
  • 1 teaspoon Vanilla
  • Confectioners Sugar

Preparation

Preheat oven to 350 degrees. Prepare a 9×9 baking pan with cooking spray.

Sift the first 5 ingredients. In a large bowl, mix the next 4 ingredients. Sometimes I like to add a few tablespoons of Kahlua to the wet ingredients. Add the dry ingredients into the bowl with the wet ingredients and beat until light and fluffy.

Pour the mixture into the pan and bake for 30 minutes. Cool completely and sift the confectioner’s sugar on top of the cake.

My grandma made this cake all the time. She would have it ready any time we visited and it was gone quite quickly.

Very easy to make and wonderful with a thin layer of buttercream frosting.
