Description

Jazz up the typical vanilla cupcake with pumpkin pie spice, and you have a real winner for any birthday party. Now that’s a great gift!

Ingredients

  • FOR THE CUPCAKES:
  • ½ cups Butter, Softened
  • 1 cup Sugar
  • 2 whole Eggs
  • ½ cups Milk
  • 1 Tablespoon Vanilla Extract
  • 1 cup All-purpose Flour
  • ¾ cups White Whole Wheat Flour
  • 1 Tablespoon Baking Powder
  • ½ teaspoons Pumpkin Pie Spice
  • FOR THE FROSTING:
  • ½ cups Butter, Softened
  • 3 cups Powdered Sugar
  • ¼ cups Unsweetened Cocoa Powder
  • ¼ cups Milk
  • 2 teaspoons Vanilla Extract

Preparation

For the cupcakes:
Preheat the oven to 350ºF. Fill a 12-count cupcake tin with paper liners.

In a large bowl, beat together butter and sugar until well blended. Add the eggs, milk, and vanilla extract and beat again.

In another bowl, mix together flours, baking powder, and pumpkin pie spice. Add the flour mixture to the wet ingredients and stir until well combined. Fill the cupcake tin and bake for 15 minutes, until a toothpick inserted comes out clean. Invert the cupcakes onto a wire rack and cool before frosting.

For the frosting:
Beat all the frosting ingredients in a large bowl until well combined. Have a few spoonfuls then frost the cupcakes! It doesn’t get much better than that!
