Ingredients

  • 1 cup Unsalted Butter, Divided
  • 5 Tablespoons Cocoa Powder
  • ¼ cups Sugar
  • 1 whole Egg, Slightly Beaten
  • ½ cups Walnuts, Finely Chopped
  • 1 cup Unsweetened Shredded Coconut
  • 1-¼ cup Graham Cracker Crumbs
  • 4 Tablespoons Jell-o Vanilla Pudding And Pie Filling Mix
  • 2 cups Powdered Sugar
  • 3 Tablespoons Heavy Cream
  • 1 Tablespoon Vanilla
  • 6 whole Squares Of Baker's Semi Sweet Baking Chocolate (1 Oz Each Square)
  • 3 Tablespoons Butter

Preparation

Line your 9 x 13 inch pan with parchment paper with some paper hanging over the ends of the pan. You really should do this as it is hard to get the bars out of the pan if you don’t.

In a medium sized bowl, heat 1/2 cup of unsalted butter in the microwave for about 30 seconds. Whisk in the cocoa and sugar. Making sure the mixture is not too hot (if it is, wait a few minutes or it will scramble your egg) add the egg. Stir for 1 to 2 minutes until well combined.

Put the mixture back into the microwave and heat for a minute. Then remove it from the microwave and stir till it looks like custard. Add the nuts and coconut and mix to combine. Add the graham cracker crumbs last. Use your hands to mix, then evenly spread the mixture into the pan pressing it down to cover the bottom of the pan. Chill for 1 hour. Make sure you chill it!

For the second layer: Cream the remaining 1/2 cup of unsalted butter in a medium sized bowl. Add the vanilla pudding mix. Stir. Add the powdered sugar next and stir in the heavy cream a little at a time. Add the vanilla to the mixture and stir again. Take your pan out of the refrigerator and spread the Jell-o mixture evenly over the first layer. Chill for 1 hour.

Third layer: Put the 6 squares of semi sweet chocolate and 3 tablespoons of butter into a medium sized bowl and heat it in the microwave for 30 seconds. Whisk together. Using a spatula pour your chocolate mixture onto your second layer after it has been chilled. Then return it to the fridge to chill for another 1 hour.

Take out of the fridge, remove it from the pan using the paper handles, cut and enjoy!
