Description

Yesterday I was super healthy. I made kale chips, spicy salmon and roasted vegetables. So of course after being totally healthy all day I convinced myself that it would be no big deal if I had one tiny, teencie, little treat. So I whipped out my mixing bowls and made a tiny, teencie, little batch of 24 triple chocolate brownie, graham cracker crust, ooey gooey marshmallow cups. I love being healthy.

Ingredients

  • 2-½ cups Finely Ground Graham Cracker Crumbs
  • ½ cups White Sugar
  • 10 Tablespoons Butter, Melted
  • 1 box Ghirardelli Triple Chocolate Brownie Mix. 18-20 Ounce Size
  • Additional Required Ingredients Specified On The Box Mix (typically Water, Eggs And Oil)
  • 8 whole Jumbo Marshmallows (or Enough To Cover 24 Cups If You Can't Find The Jumbo Ones)

Preparation

1. Combine graham cracker crumbs, sugar and melted butter in a medium-sized bowl and mix until well blended. Press mixture into two 12-count lined cupcake pans. You only need about an inch of graham crackers in the bottom of the cupcake liners. Set the pans aside and do not pre-bake!

2. Preheat oven to 350 F. Make your brownie mix according to the directions on the box. I used Ghirardelli Triple Chocolate Brownie Mix because Costco sells the giant boxes and I happen to think it’s the best brownie mix out there. You can also make your brownie mix from scratch. If you do this, then props to you.

3. Fill your unbaked graham cracker crusts with the raw brownie mix. Do not fill to the top—only 2/3 full. Bake at 350 F for 25 minutes until brownie is not liquid in the center. Remove the pans from the oven and turn the oven setting to broil.

3. Place marshmallows on all the brownies. I used the new jumbo-sized marshmallows (from Target) and cut each marshmallow into 3 pieces to get giant circles that fit perfectly on top of the brownies. You can also use mini marshmallows. Return to the oven for literally 1 or 2 minutes. Do not take your eyes off the marshmallows. Once they start geting brown remove them from the oven immediately. They will continue to brown for a couple seconds after remove them. Let cool and serve warm.
