Description

To Die For Banana Cake with Vanilla Bean Frosting—a flavor marriage made in heaven! It’s simply out of this world and you must give it a try. Comes together in about an hour, and no mixer needed.

Ingredients

  • FOR THE CAKE:
  • ⅔ cups Sugar
  • ½ cups Sour Cream
  • 1 whole Egg
  • 2 Tablespoons Butter, Softened
  • 2 whole Overripe Bananas, Mashed
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Flour
  • ¼ teaspoons Salt
  • ½ teaspoons Baking Soda

  • FOR THE FROSTING:
  • 2 Tablespoons Butter, Softened
  • 1-¼ cup Confectioners Sugar
  • ¼ cups Heavy Cream
  • ½ teaspoons Vanilla Bean Paste Or Extract

Preparation

To make the cake:
Preheat the oven to 375F (see note below). Cream together sugar, sour cream, egg, and butter. Add mashed bananas and vanilla extract. Add flour, salt, and baking soda; mix well. Pour into a greased 8×8-inch square pan. Bake at 375F for 20-25 minutes until a toothpick inserted in the center comes out clean. Cool completely before frosting.

To make frosting:
Cream butter and confectioner’s sugar together until smooth. Slowly add the heavy cream; stir until smooth. Stir in the vanilla bean paste until fully incorporated. Spread on cooled cake.

Note: Bake at 350F if using a glass pan. Recipe doubles well (9×13 pan).

I only had lemon yogurt at the time I made this, so I used it. And I didn’t have any cream for the frosting, so I just made a simple glaze and added in vanilla bean to it, although vanilla extract probably would have worked as well. Very yummy!

ButterYum – It is a hit at the office! I doubled the recipe – had forgotten the heavy cream, so made a cream cheese frosting – they love it!! :)

OMG is this heavenly – to die for – the best ever cake. I didn’t have heavy cream but I had 1/2 and 1/2 and that worked just fine. I didn’t have the square pan so I used a round 8″ cake pan and it was just fine. I have eaten almost half of this cake already. It is just the best thing EVER. I figure I’ll be big as a garage in a month. Next time I will double this recipe and make a big square pan and add walnuts to it – even more deliciousness. You have to try this – it’s out of this world good.

I expect banana cakes to be dry. I just do. This cake is SUPER moist & delicious. I made it for the first time to bring to a memorial reception & EVERYONE wanted the recipe. I came home that night & had to bake 2 more 9×13 cakes, for a 14 year old who requested this cake for her birthday party the following day. This cake is a HIT! I will bake this again & again. I have found my favorite banana cake recipe. (:

This was amazing! As long as I can make this, I don’t see a reason to make banana bread again. I used Mexican Vanilla in the icing, and it complimented the banana flavor perfectly. I’m making another today. I made one yesterday and it’s already gone! It’s excellent when eaten cold out of the fridge.
