Description

After dating my husband for several months, I discovered his favorite pie was Pecan Pie, which I had never made before. Yikes! Quick research revealed the finnicky nature of this pie, but if you use this recipe I will guarantee that you will leave your man wanting more. Pie, that is!

Let your your marriage proposals be many, and your Pecan Pie never soupy! It worked for me.

Ingredients

  • 3 whole Eggs, Slightly Beaten
  • 1 cup Dark Corn Syrup
  • 1 cup Sugar
  • 3 Tablespoons Butter, Melted
  • 1 teaspoon Vanilla Extract
  • 2 cups Pecan Halves
  • 1 whole 9-inch Pastry Or Pie Shell

Preparation

In your Kitchen Aid mixer or a bowl stir together eggs, corn syrup, sugar, melted butter and vanilla. Then add all those luscious pecans! Pour this gooey goodness into your pie shell. Don’t worry, the pecans will naturally come to the top.

Now, depending on how you like your crust you may want to put a crust shield or aluminum foil around the edges of the crust to prevent over-browning halfway through baking.

Top secret: Bake 5 minutes at 450 degrees F. Then lower the temperature to 275 degrees F, open the oven door and leave it open for 5 minutes. Close the oven door and bake the pie for 2 hours.

I don’t know why but it is perfect every time. My husband tells me so!

I’m 33 and just discovered Pecan Pie this last holiday season. I was intrigued by this recipe and tried it and loved it. I don’t think I have any other reason to try another recipe. It is divine!

I made this pie for Christmas and it was a big hit.
Disclaimers: 1) I just dumped all my remaining pecans in the pie, so it ended up being about 3 cups 2) I didn’t do the open and close the oven door thing, just baked it at 275 for 2 hours

I have to agree with your husband. This pie is excellent. The cooking method was a bit unorthodox but it worked and perfectly. Thanks for sharing this.
