Swedish Pineapple Cake

Description
This is an easy cake but it is definitely not short on taste!
Ingredients
- FOR THE CAKE:
- 2 cups Granulated Sugar
- 2 cups Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla
- 1 can Crushed Pineapple (20 Ounces), Undrained
- ½ cups Chopped Pecans
- FOR THE ICING:
- ½ cups Butter, Softened
- ¾ cups Granulated Sugar
- 1 package Cream Cheese (8 Ounces)
- ½ cups Chopped Pecans
Preparation
To make the cake, in a mixing bowl, stir together sugar, flour, soda, vanilla, pineapple, juice from pineapple, and pecans until well blended. Pour mixture into a greased and floured 9×13 pan.
Bake at 350 degrees for 30 minutes or until a cake tester comes out clean.
While the cake is baking, prepare the icing. Beat the butter, sugar and cream cheese until fluffy. Stir in the pecans. Remove cake from oven and spread icing over the hot cake.
