Description

Not only is this pie from Pink Basil ridiculously easy to make, it is sooo delicious!

Ingredients

  • 1 quart Strawberries, Chopped, Divided
  • 1 whole Baked Pie Crust
  • 1 cup Sugar
  • 3 Tablespoons Cornstarch

Preparation

Place half of the berries in the baked pie crust. In a large sauce pan, mash up the remaining berries. Bring to a boil over medium-high heat and add the sugar and cornstarch. Reduce the heat to medium and cook slowly, about 5 to 10 minutes or until the mixture is thickened.

Allow to cool for a few minutes, and then pour over the uncooked berries. Chill for at least 1 hour. Top with whipped cream.

@Scrubbergyrl – no, as you start to cook the berries the water within them will come out and the mixture will begin to boil.

This pie is very easy and tasty. I made my own pie crust/shell and simmered the strawberry mixture on low after adding the sugar and cornstarch. Will definitely be making this one again!
