Description

These delicious cookies are packed with creamy sunflower seed butter and chocolate-covered sunflower seeds!

Ingredients

  • 1 stick Butter, Softened
  • 1 cup Packed Brown Sugar
  • 1-¼ cup Sunflower Seed Butter
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • 1-¾ cup Flour
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • ½ cups Chocolate Covered Sunflower Seeds (or Chocolate Chips)

Preparation

Preheat oven to 350ºF.

Cream together the butter and brown sugar until light and fluffy. Add the sunflower seed butter and mix well. Add the egg and vanilla extract and continue to beat until smooth.

Combine the flour, baking powder and salt together then add to the wet ingredients. Mix in the chocolate-covered sunflower seeds.

Form small balls from tablespoonfuls of dough and press down gently on a lined baking sheet. Bake for 12–15 minutes or until puffy and golden.

Great! Made them a while ago to be beach snacks. They are yummy, sturdy, packable little things with a different flavor and an awesome texture. They aren’t as heavy and over-bearing as peanut butter cookies.

Also, I froze half the batch (post-baking) and when we thawed them and ate them at a later date, we couldn’t tell the difference from the fresh ones.

Thanks for the recipe. It’s a really fun idea!
