Description

The perfect summertime dessert: Strawberry Pie! A pre-baked pie crust filled with fresh strawberries and topped with a beautiful homemade strawberry glaze. Double the recipe and make two so there is plenty to go around.

Ingredients

  • 1 whole Pre-baked Regular Pie Crust
  • 1 cup Granulated Sugar
  • ¼ cups Cornstarch
  • ¼ cups Strawberry Gelatin, Dry (jello)
  • 1 Tablespoon Lemon Juice
  • ½ teaspoons Strawberry Extract
  • 1-½ cup Water
  • 1-½ pound Fresh Strawberries, Hulled And Cut In Half
  • Whipped Cream, For Garnish

Preparation

Preheat the oven to 350 degrees. Line the bottom of your pie shell with parchment paper or foil. Place pie weights or dry beans on the paper. Pre-bake the pie crust until golden brown, approximately 15-20 minutes. When done, remove pie weights, beans and parchment paper. Let the pie crust cool completely on a wire rack.

While your pie crust is cooling, prepare the strawberry filling. Combine the sugar, cornstarch, gelatin, lemon juice, strawberry extract and water in a medium size pot. Bring mixture to a boil, then reduce heat to medium and cook until the mixture thickens, whisking often. Remove from heat and let the mixture cool to room temperature. Arrange the strawberries in the baked pie shell. Pour the filling over the strawberries, coating them completely. Refrigerate until set, about 2 hours.

Store in the refrigerator up to 2-3 days. Serve with a dollop of whipped cream.

Made this a couple weeks ago and it was wonderful! I did add more strawberry gelatin and left out the strawberry extract (which is really not necessary, esp during strawberry season). Thanks for sharing!

The strawberry extract is found in the regular baking isle with the extracts. I like the additin of the jello it gives it a great flavor.

This is my go to strawberry pie, which I make a lot of to take to others…we definitely eat up fair share! I don’t put the strawberry extract in—it doesn’t need it.

I made 2 of these yesterday. Less than 24 hours later, there is only 2 small slices left, and I just baked the crusts for 2 more. Enough said. We grow our own strawberries, so I’m sure that makes it even better. The only thing I would do differently (and did with the 2nd pie) Is instead of pouring the “liquid” over top, (once it was cooled) I mixed the strawberries in and then poured it into the crust all together. When I poured the “liquid” over top of the first one it didn’t move through the berries very fast and went all over the crust. Didn’t affect the flavor and it certainly didn’t keep them from eating it. It just didn’t look as pretty.

This was fabulous! Made it last night and everybody had two pieces – needless to say there isn’t any left. I did omit the extract (didn’t have it) and it was still amazing! Thank you!

Absolutely delicious! I also omitted the extract because I didn’t have it, but it was still very good. My dad absolutely loved this pie, said it was better than the Marie Callendar’s version and wouldn’t share it with anyone :) Thank you so much for sharing it!!
