Description

Perfect for a little girls’ party or for any day!

Ingredients

  • FOR THE COOKIES:
  • 1-½ cup Butter, Softened
  • 2 cups Sugar
  • 2 whole Eggs
  • 5 teaspoons Vanilla
  • 3 teaspoons Almond Extract
  • 4 cups Flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking Powder
  • _____
  • FOR THE FILLING:
  • ¾ cups Butter, Softened
  • 4 teaspoons Vanilla
  • 3 teaspoons Almond Extract
  • 1 teaspoon Cherry Flavor*
  • 5 cups Powdered Sugar
  • ¼ cups Milk, If Needed

Preparation

1. Preheat oven to 350F.
2. In a large bowl, cream butter and sugar.
3. Add eggs, vanilla and almond extract. Mix until fully incorporated.
4. In a large Ziploc bag put flour, salt and baking powder. Close bag and shake until combined.
5. Snip off tip of Ziploc bag and slowly pour into the butter and sugar mixture. Mix until fully combined.
6. Scoop by the tablespoonful onto a parchment lined baking/cookie sheet.
7. Bake for 8-10 minutes.
8. Remove and let cool.
9. For the frosting, cream butter, vanilla, almond extract, and cherry flavor. Slowly incorporate powdered sugar. Add milk until desired consistency is reached.
10. Put about 2 Tablespoons of frosting onto the bottom of a cooled cookie. Gently place another cookie on top and gently smash together.

I used the kind you can find by the Vanilla and almond extracts. I believe it was made by McCormick. I hope that helps.

made these using Earth Balance buttery spread for a friend who is allergic to dairy. left out the almond too, as i wasn’t sure she could have that.

had to bump up the flour content (made a half recipe to start and there wasn’t enough flour), but other than that, these are SO GOOD! absolutely fantastic flavor, and 24 hours later they’re still soft!

didn’t make the filling, as i’m shipping the cookies and the cream wouldn’t make it, but i’ll be making these cookies again for my family and trying the cream! thanks for sharing.
