Description

A healthier, protein-packed substitute for ice cream! Creamier than your regular granita.

Ingredients

  • 2 cups Plain Greek Yogurt
  • 2 cups Chopped Strawberries
  • 1 teaspoon Sugar (or Sweetener Of Choice)

Preparation

In a large bowl, stir together yogurt, chopped strawberries, and sugar. Spread on a baking sheet and freeze for 1-2 hours. Remove from the freezer and scrape with a fork, releasing ice crystals. Freeze again for 30 minutes, then scrape again. Repeat one more time.

Remove from freezer and serve immediately.

I’ve been waiting for my strawberries to ripen so I’d have enough to try this. Finally! I sweetened my yogurt with liquid vanilla stevia, which is usually how I eat it, but it is REALLY tart even though my berries were super sweet. I think I’ll add a bit more next time. I froze my sheet for an hour and a half the first time. I think next time I’ll start to stir it around after 45 mins. or so. Love this, and I’m super excited to have a healthy ice cream alternative since I want a cool treat ALL THE TIME in the summer. :-)
