Description

Easy strawberry cookies using boxed cake mix layered between a strawberry cream cheese filling.

Ingredients

  • ½ cups Unsalted Butter, Softened, Divided Use
  • 1-½ cup Boxed White Cake Mix
  • 3-½ Tablespoons Strawberry Jello (dry Mix)
  • 5 Tablespoons Milk, Divided
  • 1  Egg
  • ½ cups White Chocolate Chips
  • 4 ounces, weight Cream Cheese, Softened
  • 2 cups Powdered Sugar
  • 4  Strawberries, Pureed With Jelly
  • 1 Tablespoon Strawberry Jelly
  • ½ teaspoons Vanilla

Preparation

Preheat oven to 350 F.

For the cookies:
In a medium size bowl, beat 1/4 cup butter with a mixer until smooth. Add cake mix, Jello mix, 2 tablespoons milk, and egg. Beat until combined. Stir in chocolate chips.

Drop rounded tablespoons of batter on a parchment lined baking sheet, spacing them about 2 inches apart. Bake for 10 minutes, or until cookies are set.

Remove pan from oven. Let cookies cool completely before adding the filling.

For the filling:
In a medium sized bowl, beat remaining butter and cream cheese until smooth. Add powdered sugar and continue beating until combined and smooth.

Puree the strawberries and jelly together in a small food processor. Add the pureed strawberry and jelly mixture and vanilla into the cream cheese mixture. Add remaining 3 tablespoons milk a tablespoon at a time until you reach the desired consistency.

To assemble cookies:
Spread a layer of filling on the bottom side of a baked cookie. Add the second baked cookie and sandwich together. Repeat.
