Description

Refreshing…perfect for a hot summer day!

Ingredients

  • 1 whole Package Of Graham Crackers
  • ¼ cups Melted Margarine
  • 2 cups Strawberry Puree
  • ¾ cups Sugar
  • 2 whole Egg Whites
  • 1 teaspoon Vanilla
  • 1 whole Lemon
  • 2 cups Cool Whip

Preparation

Finely crush 1 package of graham crackers. Mix crushed crackers and 1/4 cup melted margarine together. Once mixed, press firmly into the bottom of a 8×8 or 9×9 cake pan.

Puree enough fresh strawberries to give you 2 cups of strawberry puree.

Add 3/4 cup sugar, 2 egg whites, 1 tsp. vanilla, and zest from 1/2 of a small lemon, and a squeeze of lemon juice.

Blend in your blender for 3 to 4 minutes. (This will almost double in size) Fold in 2 cups of cool whip. Pour over graham cracker crust. Freeze until firm. ENJOY!

This was delicious!! I actually made cupcakes instead of a pie: I put graham cracker crumbs on the bottom of paper liners and poured the mixture over it and froze the cupcake tin. Then, I garnished it with sliced strawberries. It was very good! I made it for my birthday dessert and got only positive feedback from my family and friends.

This is so light and refreshing..love it! I garnished with sliced strawberries and lemons, it was beautiful. I think next time I’m going to substitute lime for the lemon and make it a Strawberry Limemade Pie. Great recipe, thanks for posting!
