Description

Pretty pink bars cut into a heart shape, just in time for Valentine’s Day!

Ingredients

  • FOR THE CRUST:
  • ¼ cups Sugar
  • ½ cups Butter, Softened
  • 1-½ cup Flour
  • ¼ teaspoons Salt
  • FOR THE FILLING:
  • 1 cup Lemon Juice
  • 1 whole Lemon, Zested
  • ¾ cups Whole Strawberries
  • 1-¼ cup Sugar
  • 4 whole Eggs
  • ½ teaspoons Baking Powder
  • ¼ teaspoons Salt

Preparation

Preheat oven to 350ºF.

For the crust:

Cream with butter. Slowly add flour and salt until crumbly.

Press crust into a greased 9×13 inch baking dish. Bake crust for 17 minutes.

For the filling:

While baking the crust, in a food processor, blend the lemon juice, zest and strawberries. Add sugar, eggs, baking powder and salt to processor and blend until smooth.

Once crust is baked, pour filling on top and bake for 23-26 minutes so that filling is set. Cool completely before cutting into bars.

Keep refrigerated until ready to serve.

I made these for Easter. They were vry easy to make, but the reviews i got were mixed. They turned out to be a little tart, so maybe add more strawberries or sugar to the filling mixture. Most of the people who liked them arent normally fans of sweets, so they might work for you if you feel that way.
