Preheat broiler to high. Spray a ramekin with cooking spray; set aside
In a small bowl mix together cinnamon and sugar; set aside.
Brush the flour tortilla with a little bit of water and sprinkle with cinnamon and sugar mixture. Gently fit the tortilla into the ramekin and place into the oven. Broil for 3-6 minutes, until the top is lightly browned (be sure to watch it). Set aside to cool for about 3-5 minutes.
Meanwhile in a blender or food processor, add frozen strawberries and milk and process until it reaches ice cream consistency. You may need a pinch more milk. Add about a teaspoon at a time until creamy. You can also add additional flavors to your strawberries such as sugar, chocolate chips, etc. If you do, blend again until incorporated.
Add your ice cream into your tortilla cup! Serve and enjoy.
