Description

This is the icing recipe that goes with my “The Best Strawberry Cake!” recipe also on TastyKitchen. It can also be used on other cakes, but on this cake it is wonderful!

Ingredients

  • ¼ cups Butter, Softened
  • 1 package Cream Cheese (8 Ounce Block, Softened)
  • 1 package Frozen Strawberries In Syrup (10 Ounce, Thawed And Pureed)
  • ½ teaspoons Strawberry Extract
  • 7 cups Confectioners Sugar

Preparation

1. In a large bowl, beat butter and cream cheese at medium speed with an electric mixer until creamy.

2. Beat in 1/4 cup of the strawberry puree, reserving the remaining puree for another use.

3. Beat in the extract. Gradually add confectioner’s sugar, beating until smooth.

Note: For pinker frosting, add 2 to 3 drops of red food coloring to frosting.

*Spread on top of “The Best Strawberry Cake!” for a pretty, pink treat!*

This icing is to die for! I couldn’t find strawberry extract so I just used a couple more spoonfulls of the strawberry syrup from the leftover strawberries. It made the icing a bit runny, but sooooo delicious.

Forget the cake, I could eat this with a spoon! Very good frosting, even if you don’t have any extract. I just added a tiny bit more puree. Super tasty.
