Description

This is a wonderfully rich brownie that is best served chilled. Chopped strawberries are sandwiched between a layer of cheesecake and dark chocolate brownie. This makes a large portion.

Ingredients

  • FOR THE CHEESECAKE LAYER:
  • 16 ounces, weight Cream Cheese
  • 1 cup Sugar
  • 2 whole Eggs
  • 2 Tablespoons Flour
  • FOR THE FILLING:
  • 1 pound Strawberries, Coarsely Chopped
  • 1 teaspoon Lemon Juice
  • ⅛ cups White Sugar
  • 1-½ Tablespoon Flour
  • FOR THE BROWNIE LAYER:
  • 1 cup Butter
  • 4 ounces, weight Unsweetened Chocolate
  • 2 cups Sugar
  • 4 whole Eggs
  • 1 teaspoon Vanilla
  • 1 cup Flour
  • ¼ teaspoons Salt

Preparation

Set oven to 350F and line a 9×13 inch pan with foil and then coat the foil with cooking spray.

Brownie Layer:
Melt the butter and chocolate in the microwave in 30 second increments, stirring frequently to keep the temperature even.
When melted and smooth add sugar and eggs to the chocolate mixture.
Add rest of brownie ingredients and pour into prepared pan.

Strawberry Filling
Stir all of the strawberry filling ingredients together and spread them over the brownie layer. Do not touch edge of pan with this layer.

Cheesecake Layer
Combine cheesecake layer ingredients. I used a food processor to make this smooth and easier to pour. A mixer will work just fine, too. Pour this mixture over the strawberry filling layer.

Bake for 40 minutes or until cream cheese layer is set.

Hint: To keep cracks from forming in the cheesecake allow the pan to cool for about 5 minutes.
