Description

These are really more of a snack bar, but in my house, there is no such thing as leaving good enough alone. We topped each bar with chocolate or vanilla ice cream and ate them for dessert!

Ingredients

  • 6 cups Fresh Strawberries, Sliced
  • ½ cups White Sugar
  • 1 Tablespoon Cornstarch
  • 3 cups All-purpose Flour
  • 1 cup White Sugar
  • 1 teaspoon Baking Powder
  • ½ teaspoons Salt
  • 8 ounces, weight Cold Butter
  • 1 whole Egg
  • 1 teaspoon Vanilla
  • ⅓ cups Milk

Preparation

This is a two-bowl recipe and very easy to make. It probably would make a great “lunchbox” dessert too.

Preheat the oven to 375 degrees and grease a 9×13 inch glass pan.

Add the sliced strawberries, sugar and cornstarch to a bowl. Lightly toss to mix everything together. Set aside.

In another large bowl, mix together the flour, sugar, baking powder, and salt. Mix everything together.

Cut the butter into small pieces. Cut the butter into the dry ingredients with a pastry cutter.

Beat the egg and the vanilla together. Add the milk to the egg and vanilla and pour into the bowl with the dry ingredients and the butter. Mix everything together (you can use your clean hands if necessary) until you have a crumbly dough.

Take about 2/3 of the dough and pour it into the bottom of the greased pan. Press it down with your hands until it has formed a thick crust on the bottom. Pour the sliced strawberries evenly over the crust. Scatter the remaining dough crumbles over the top of the strawberries.

Bake the bars at 375F for 50 minutes. Remove from the oven and let the bars cool before cutting them into squares. (Serve them as a snack or with ice cream for dessert!)

These were great! It did take a bit more time than 10 minutes to prep, I would say closer to a half hour. The sweet shortbread-type dough is really delicious. I used frozen berries that I had picked over the summer. After the mixed berry mixture sat for a half hour I ran them through a colander to drain the excess juices before adding to the pan. Really nice recipe, thank you for sharing!

This was very good. Next time I would service it with ice cream, sort of like a cobbler. I found that if you cut the squares too small, they crumble too much to pick up. I would definitely make again, but service with a fork as sort of a cobbler.

This is a very easy recipe. It’s awesome. Just something else to do with fresh strawberries. I will definately be making this recipe again!!!
