Description

This sweet and fruity dessert has the flavor of a cheesecake, but is the perfect light ending to a meal. You can make both the crust and filling ahead of time, and assemble before serving.

Ingredients

  • 9 whole Honey Graham Crackers
  • 2 Tablespoons Sugar, Plus 1/2 Cup
  • 4 Tablespoons Butter, Melted
  • 1 package Cream Cheese (8 Ounces)
  • ½ cups Sugar
  • ½ teaspoons Vanilla Extract
  • ¼ teaspoons Almond Extract
  • ⅓ cups Whipped Topping
  • ½ packages Strawberries (1/2 Pint)
  • ¼ cups Strawberry Glaze Or Melted Strawberry Jam

Preparation

1. Preheat oven to 350 degrees, and spray a 10-inch tart pan with cooking spray.

2. Place crackers in blender or food processor, and process until crumbly. In a bowl, combine cracker crumbs, sugar, and butter.

3. Mix with a fork until well combined. Pour into tart pan and push down against bottoms and sides.

4. Bake crust for 10 minutes and let cool.

5. For filling, mix cream cheese and sugar in stand mixer until thoroughly mixed. Add extracts and mix again. Fold in whipped topping.

6. To assemble, spread cream mixture evenly over crust.

7. Slice strawberries very thinly.

8. Layer the strawberries either from the inside out or the outside in.

9. Drizzle with strawberry glaze or some melted strawberry jam.

We loved this! I added some extra whipped cream and went a little light on the almond extract. I don’t usually like things too heavy on the almond. We enjoyed it! Even my husband (Mr. Steak and Potatoes) said it was yummy!

So tasty and it makes a great presentation! We took this to a Memorial Day cookout and everyone loved it!

It was delicious! But… I altered it, I used 1 1/4 cups of Whipped Topping rather than the recommended 1/2 cup, it gave it a lighter and thicker fill. Next time I will reduce the almond extract, it was a little over powering (and I love, love, love almond!) WONDERFUL light dessert, and it was so easy!!!!
