Description

Strawberries filled with vanilla bean cream make a delicious and elegant, yet simple dish.

Ingredients

  • 1 pound Strawberries, Hulled
  • ½ cups Mascarpone Cheese
  • ¼ cups Whipping Cream
  • 1 whole Vanilla Bean, Scraped
  • 1 Tablespoon Sugar

Preparation

Rinse, dry, and hull the strawberries.

With a hand mixer, start on low, and beat together the mascarpone and whipping cream for about 30 seconds. Increase speed to medium and beat for 30 seconds longer.

Cut and scrape the seeds from the vanilla bean. Add the vanilla beans and sugar to the cream mixture. Beat on medium to combine.

Line a tall cup with a gallon sized zip lock bag. Transfer the vanilla bean cream mixture to the bag, easing the mixture to one of the bottom corners. Cut a small tip from this bottom corner of the zip lock bag. Pipe the filling into each hulled strawberry.

Try not to pipe the filling directly into your mouth. Enjoy!

Note: In the event that you cannot find mascarpone cheese, I’m sure regular old cream cheese would work too.

This was amazing! Definitely making this many more times, and possibly to go with other fruit as well. I made a bit of a mistake by over-beating it, and it became very stiff — but still delicious. In fact, it might be easier to decorate with when it’s so stiff, though next time I will try to keep it more fluffy. Thank you!

Love using the mascarpone in this recipe! This has quickly become one of my favorite recipes to use with strawberries! It is so easy to make too.

Very good mascarpone topping for fruit! I used 1 cup of mascarpone and 1 cup of whipping cream just to finish the containers because I would not use the leftovers. I had to beat longer to get the creamy consistency due to that. I added 3 tablespoons of powdered sugar. I love how vanilla bean speckles look in it. Will be served tonight over peaches, strawberries and cantaloupe.

Yummy & so pretty. It’s also really good if you fold in some cocoa powder or cooled melted chocolate into the cream mixture. We really like choc. around here. :D
