Description

Oh man these are good. If you like Spumoni ice cream, you will love these.

Ingredients

  • 2-¼ cups All-purpose Flour
  • 1 teaspoon Baking Soda
  • 1 cup Butter, Softened
  • ¼ cups White Sugar
  • ¾ cups Packed Brown Sugar
  • 1 package (3.4 Oz. Package) Pistachio Instant Pudding Mix
  • 2 whole Eggs
  • 1 teaspoon Almond Extract
  • 1 teaspoon Green Food Coloring (optional)
  • 1 package (16 Oz. Package) Semi- Sweet Chocolate Chips (optional)
  • ½ cups Maraschino Cherries
  • ¼ cups Chopped Pistachios

Preparation

Preheat oven to 350 degrees F .

Sift together the flour and baking soda; set aside.

Cream together the butter, white sugar, and brown sugar in a large bowl until smooth. Stir in the instant pudding mix until well combined. Beat in the eggs one at a time, then stir in the almond extract and food coloring, if using.

Blend in the flour mixture. Fold in the chocolate chips, cherries, and pistachios. Drop by large spoonfuls onto ungreased or silicone-lined baking pans. Bake in the preheated oven until light brown, about 10 minutes.

YUM!

I left out the cherries (not that fond of them) and used mini chocolate chips instead of regular (it was what I had) – otherwise made them exactly as the recipe instructed.

These are so good! Moist and soft and really flavourful!

I will definitely be making these again!
