Description

Soft, delicious, melt-in-your-mouth sugar cookies rolled in sprinkles for an added oomph of fun!

Ingredients

  • 2-½ cups All-purpose Flour
  • 1 teaspoon Baking Powder
  • 1 cup Unsalted Butter, Softened
  • ¼ cups Cream Cheese
  • ¾ cups Granulated Sugar
  • ¾ cups Powdered Sugar
  • 1 whole Egg
  • 1 teaspoon Vanilla Extract
  • 2 cups Rainbow Sprinkles

Preparation

In a medium bowl combine the flour and baking powder. Set aside.

In the bowl of an electric mixer add the butter, cream cheese, and sugars. Mix on medium until light and fluffy, about 3 minutes. Beat in the egg and vanilla. Add the dry ingredients and mix until just combined.

Transfer dough to a sealed container and refrigerate for 1 hour (up to 48 hours).

When ready to bake preheat the oven to 350 F and line 2 cookie sheets with parchment paper.

Roll the cookie dough into small balls, about 1-1 ½ inches in diameter, then roll the balls in the sprinkles. Evenly space the cookie dough balls on the cookie sheet leaving an inch or two between them. Press them down just slightly with either your fingers or a glass until they are in the shape of small disks (but not too flat).

Bake for 10 minutes. Remove from oven. Let cookies sit on the pan for 1-2 minutes before transferring to a cooling rack to cool completely.
