Description

Simple, elegant, and healthy, poached pears are a dinner party delight. Poaching infuses the pears with flavor, while the chocolate sauce adds decadence without the use of refined or artificial sweeteners. Gluten and dairy free.

Ingredients

  • 3 cups Water
  • ½ teaspoons Vanilla
  • 1 whole Cinnamon Stick
  • ¼ teaspoons Nutmeg
  • 2 whole Bartlett Or Bosc Pears, Peeled
  • FOR THE DARK CHOCOLATE SAUCE:
  • 2 ounces, weight Bittersweet (100% Dark) Chocolate
  • ½ cups Water
  • ⅓ cups Coconut Palm Sugar
  • 2 Tablespoons Pure Maple Syrup Grade B
  • 2 Tablespoons Raw Honey
  • ¼ teaspoons Sea Salt

Preparation

In a small saucepan, add water, vanilla, cinnamon stick, nutmeg, and pears. Bring to a boil, cover partially, and reduce heat to low. Simmer for approximately 20–25 minutes, or until pears are soft (easily sliced with a knife). Be careful not to overcook, or pears will become mushy. When pears are done, remove from saucepan and set aside to cool.

To prepare the dark chocolate sauce, add chocolate, water, palm sugar, maple syrup, honey and salt to a small saucepan. Bring to a boil, then reduce heat to low. Simmer until sauce thickens slightly, approximately 10 minutes. Remove from heat and let cool. Drizzle sauce over the pears and serve.
