Description

A spiced peach cobbler using coconut milk nog but can be made with egg nog as well!

Ingredients

  • FOR THE PEACH MIXTURE:
  • 16 ounces, fluid Bag Frozen Peaches
  • 2 Tablespoons So Delicious Coconut Milk Nog Or Egg Nog
  • 2 Tablespoons Arrowroot Powder, Or Cornstarch
  • ½ cups Agave Nectar Or Other Sugar
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon
  • ¼ teaspoons Nutmeg
  • ¼ teaspoons Ground Ginger
  • ¼ teaspoons Ground Cloves
  • FOR THE DOUGH:
  • 1 cup Whole Wheat White Flour
  • ½ Tablespoons Baking Powder
  • 2 Tablespoons Sugar, Plus More To Sprinkle Over The Dough
  • ¼ teaspoons Salt
  • ¼ cups Vegetable Shortening Or Coconut Oil
  • 1 Tablespoon Flaxseed Meal
  • 3 Tablespoons Warm Water
  • ¼ cups So Delicious Coconut Milk Nog Or Egg Nog

Preparation

Preheat oven to 400ºF.

In a medium bowl, add the peaches, nog, arrowroot powder, sweetener, vanilla and spices and mix well. Pour peach mixture into a 9×9 glass pan.

Prepare the dough mixture. Add the flour, baking powder, sugar and salt in a medium bowl. Using a pastry cutter, cut the vegetable shortening into the flour until the mixture looks like wet sand. Mix the flax seed meal and warm water to make a flax seed “egg” and set aside for 3-5 minutes. You can also use a regular egg. Add the “egg” and nog coconut milk and mix until well combined.

Add the dough in lumps on top of the peach mixture. Sprinkle sugar over the dough. Bake your cobbler for 20-25 minutes until the dough is golden. Cool for a bit and serve with a glass of Nog coconut milk or with So Delicious vanilla bean ice cream.
