Description

This dessert/pudding is a sweet, decadent, traditional South African dish and it’ll have you running for your Spandex pants once you’ve had a slice.

Ingredients

  • FOR THE PUDDING:
  • 2 Tablespoons Unsalted Butter
  • 1 cup Sugar
  • 2 Tablespoons Smooth Apricot Jam
  • 2 teaspoons White Wine Vinegar
  • 2 cups Flour
  • 2 cups Milk
  • 2 whole Eggs
  • 2 teaspoons Baking Soda
  • 1 pinch Salt
  • Whipped Cream, To Serve
  • FOR THE SAUCE:
  • 1 cup Whipping Cream
  • ½ cups Butter
  • ½ cups Brown Sugar
  • ½ cups Water
  • 2 teaspoons Molasses
  • ½ teaspoons Vanilla

Preparation

For the pudding:
Preheat oven to 350 F.

Put the butter, sugar, apricot jam and vinegar in a large saucepan over medium heat. Stir and heat until the sugar has dissolved and the mixture is smooth. Remove from heat and allow to cool.

Sift the flour into a small bowl. Alternate adding the flour and the milk into the jam mixture. Stir each time until the mixture is smooth and thick. Add 1 beaten egg at a time and blend well. Add the baking soda and salt. Blend well.

Pour the mixture into a greased 9×13 baking dish and bake at 350 F for 30-45 minutes or until a toothpick comes out clean from the middle of the pudding.

For the sauce:
Heat all of the sauce ingredients in a saucepan set over medium heat. Stir and allow the mixture to come to a simmer. Remove from the heat.

Pierce the top of the pudding several times with a fork—to allow the sauce to drain into it. Pour the sauce over the hot pudding.

Serve with custard or whipped cream.
